I see there is a requirement to bring two original proof-of-address documents. however, in my country, nothing is every sent - it is all electronic, and apparently print-outs are not accepted. How important are these documents?

They do not require those documents any longer. Just a driving license written in Roman alphabet issued at least for one year and proof of identity, preferably passport. And a valid credit card
